  9. I'm all in for the dietary fibers in whole grain foods but mentioning B vitamins here is severely misleading.
    Cooked pasta isn't a healthy source at all.

  11. To everyone saying this isn't bolognese because it contains no meat: What you consider bolognese probably isn't bolognese either. Most people think of bolognese as a tomato sauce containing ground beef. Officially, bolognese uses chunks of stewing meat that's braised for a long time rather than ground meat, and it has to be a mixture of different meats including beef and lamb (and sometimes pork), not just beef.

    If you're going to criticize someone else, get your own facts straight first.

  12. Really really enjoyed this. Had been looking for a non processed (i.e not quorn) veggie bolognaise recipe and this one works a treat. I just left out the carrot and used basil instead of parsley. Yum :-)

  15. I'm glad he mentioned the Parmesan not being veggie, but watch out for wines, too. Isinglass is distinctly non-vegetarian.

  18. I'll try this but I usually buy the same amount of fresh mushrooms (usually button mushrooms) as it would cost if buying a beef mince/pork mince blend.
    Say you spend $10.00 on meat, substitute it for $10.00 of mushrooms instead and add them at different stages of the cooking process. At the end, blitz it all with a bamix or similar so it has the same consistency as mince.
    Heaps of my friends haven't even noticed this dish is vegetarian, but when I tell them they all want the recipe.
    One thing to note is that I still use Reggiano Parmigiano for the cheese topping.
    Either way this is a REALLY good dish!
