    Marinade: 2 cloves garlic, minced 2TBSP wine vinegar 1/3 c olive oil
    you will need 16 peppers, 4 Oz. cream cheese, 4 Oz goat cheese and 3/4 cup shredded monterey jack cheese and 2 TBSP chopped cilantro

    you can buy a pepper roaster rack which i have but don't recommend or as I do…lay the peppers on the side length wise and see which way is more flat. cut lengthwise skimming the side/tops off creating a boat-like appearance. Leaving the peppers heads on will keep in the cheese while cooking. Create marinade in a small bowl shallow enough for marinade but big enough for peppers. whisk together minced garlic and vinegar, slowly adding olive oil. place peppers in the glass bowl pouring marinade over, refrigerate 2 hours.
    Prepare stuffing: in a medium bowl blend and mix together cream cheese, goat cheese monterey jack cheese and cilantro. Place stuffing inside peppers and continue adding until the peppers appear full. try not to overstuff as you will not have enough to go around.
    Wrap peppers gently and tightly with a full strip bacon, you made place a toothpick through pepper to hold ban only if you feel it necessary. I have become really good and don't need toothpicks anymore.
    Preheat oven to 400 degrees, bake at 400 for 40 minutes. You may need to adjust your cooking time if you're using gas, always set the timer for 35 minutes and check accordingly.
    Be careful when removing, bacon grease might pop or splash. cool 5 minutes and enjoy!
    If you want to try the pepper roaster, it is called Norpro stainless steel/knockdown pepper roaster. But I use a foil lined cookie sheet because the peppers like to lay down while cooking. And I got tired of them always falling over

  10. one of my favorite go-to's, stuffed jalapeños wrapped in bacon. they are made stuffed with a mixture of goat cheese, cream cheese, and monterey jack. i will find the recipe and post here

    Not sure if I experienced the flu or low blood sugar, or low calories with my active job. But I had to quit my third night. Felt so weak. Also doing 14 hour fasts. I was low in calcium I think, fingers twitching. So ate and then took my multivitamin. Felt a bit better at work when I added electrolytes to my water vs just Kool aid. But idk think I'm going to be less strict until I get used to it

  17. Im sorry.. this does not explain (practically) how to start my Keto diet. A bunch of technical termss and explanations.. i thought you will explain day by day or week by week how to actually prep your meals, what to get.. what to expect.. etc
